Ingredients
  

  • 2 cups beets , peeled and diced
  • 2 cups carrots , sliced
  • 1 tablespoon maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions
 

  • Preheat oven to 375 degrees.
  • Add all ingredients to a mixing bowl. Toss well, making sure to coat everything evenly.
  • Spread mixture onto a baking sheet in one even layer.
  • Place in the preheated oven. Bake for 25-30 minutes. Roasted beets and carrots will be ready when a fork can easily pierce through and edges are golden and crispy.
  • Top with you favorite fresh herbs, if desired and serve warm.
