Chicken Salad with Greek Yogurt

This Chicken Salad with Greek Yogurt is packed with all that you would expect in a chicken salad: seasoned chicken, juicy grapes, crunchy celery, seasonings, and flavors that are wrapped in a creamy dressing. This is a perfect make ahead recipe that you can easily grab and go when needed.

Traditionally chicken salad uses mayonnaise as its creamy binder that brings all the ingredients together. While, I don’t mind the taste of mayonnaise (and I know many people that do), I find it really hard to source a good quality mayonnaise without inflammatory oils. And, if you find a good one it’s typically astronomical in price.

Using greek yogurt instead of mayonnaise creates a nice, neutral flavor to this chicken salad. Not only that, but you also get all the amazing benefits of greek yogurt, such as the good bacteria that we all need as well as the added protein.

To make this Chicken Salad with Greek Yogurt you’ll need the following ingredients:

Chicken: Chicken breasts or a rotisserie chicken works best for this chicken salad. This recipe calls for cooked and shredded chicken. See notes below on different ways to cook.

Greek yogurt: Plain. I used full-fat, but feel free to use any fat variety that you’d like.

Onion: White or Yellow.

Grapes: Red or green.

Celery: Adds a nice crunch to the salad.

Dijon mustard: Brings in hint of tang to this salad.

Lemon juice: Brightens up the dressing.

Garlic powder

Sea salt

Black pepper

To make this Chicken Salad with Greek Yogurt you’ll follow a few simple steps:

1) Slice the celery, onion and grapes accordingly.

2) Add all ingredients to a mixing bowl

Ingredients
  

  • 3 cups chicken , cooked and shredded
  • 1/2 cup celery , chopped
  • 1/2 cup red grapes , quartered
  • 1/2 cup onion , white or yellow
  • 1/2 cup greek yogurt , plain
  • 1/2 teaspoon dijon mustard
  • 3 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Prepare the produce as noted. Mince onion, dice celery and quarter the grapes. Set aside.
  • Add shredded chicken to a mixing bowl.
  • Place the remaining ingredients in the bowl with the chicken (celery, onion, grapes, greek yogurt, dijon mustard, lemon juice, sea salt, black pepper, and garlic powder).
  • Mix ingredients well until combined.
  • Serve over crusty bread, crackers or a bed of lettuce.

Notes

Chicken: Lots of methods for cooking and preparing your chicken. If you have chicken breast at home, I would recommend seasoning it with salt, pepper and olive oil. Bake in a preheated oven at 375 for roughly 20 minutes, or until the internal temperature reaches 165 degrees. Once cooked, shred chicken with two forks. Alternatively, you can purchase a rotisserie chicken from the grocery and clean the meat off the bones. Tear chicken into bite size pieces and use accordingly. 
Additions or substitutions: This chicken salad can be tweaked to meet your favorite flavors, or accommodate maybe what’s already in your pantry. Don’t have greek yogurt? You can absolutely use mayonnaise in place here, or even just plain yogurt. You can substitute diced apples for the grapes, which adds a nice crunch. Some great additions would be slivered almonds, green onion and fresh herbs.
