Burrata Peach Salad
If there was ever a dish that I look forward to once the farmer’s markets open, it’s this one. Burrata Peach Salad. There’s nothing quite like picking up fresh peaches, tomatoes and basil and tossing it with a creamy burrata. This salad is incredibly easy to pull together, but looks like something you’d order at your favorite fine dining restaurant.
Burrata Peach Salad is a perfect salad to serve up at your next summertime dinner party. It pairs extremely well with your favorite grilled meats. Assemble the salad at home, cover it up and dress it with the vinaigrette upon arrival. Your friends and family will thank you.
To make this salad you’ll need the following ingredients.

Olive oil: This will be the base of your dressing.
Balsamic vinegar: Brings in a lot of the flavor for this dressing, there really is not substitute here.
Honey: Adds a hint of sweet to your dressing,
Garlic: Fresh garlic.
Lemon juice: Balances out all the flavors of your dressing.
Sea salt
Black pepper
Crushed red pepper: A slight kick, hardly noticeable. Feel free to adjust this to your liking.
Arugula: I love the heartiness of arugula for this salad. Can alternatively try spring mix or even spinach here.
Basil: Adds great flavor.
Peaches: Fresh peaches. Frozen and canned will not work well with this recipe.
Shallot: Adds a peppery bite to this salad.
Cherry tomatoes: Can use grape tomatoes if you can’t find cherry.
Heirloom tomatoes: Heirloom tomatoes add incredible flavor and appeal to this salad, though you can absolutely use large slicing tomatoes if this is not an option.
Burrata cheese: Burrata cheese is what makes this salad. However, if you can’t find burrata, or don’t love it, you can easily sprinkle crumbled feta or goat cheese instead.
Pistachios: Adds a great crunch. Sunflower seeds or pecans would be excellent as well.
A few simple steps to make this salad:
1. Mix your dressing
2. Slice your tomatoes, shallot and pistachios.
3. Arrange arugula and heirloom tomatoes on your serving platter.


4. Add the remaining salad ingredients.
5. Carefully slice open balls of burrata, allowing the cream to ooze out.
6. Drizzle with prepared dressing.

Ingredients
Dressing
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 clove garlic ,minced
- 1 tablespoon lemon juice
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Salad
- 5 cups arugula
- 1 cup basil ,fresh
- 1 shallot
- 2 peaches
- 1 cup cherry tomatoes
- 3 heirloom tomatoes
- 1 8 ounce burrata cheese
- 1/2 cup pistachios
Instructions
- Add all of the dressing ingredients to a small mixing bowl: olive oil, balsamic vinegar, honey, garlic, lemon juice, sea salt, crushed red pepper flakes, and black pepper. Mix well and set aside.
- Slice cherry tomatoes in half, set aside.
- Thinly slice shallot, set aside.
- Slice heirloom tomatoes into 1/4 inch slices, set aside.
- Roughly chop pistachios, set aside.
- Assemble your salad. Arrange arugula across a serving dish. Lay heirloom tomatoes across the top of arugula.
- Evenly distribute basil leaves across the salad.
- Sprinkle cherry tomatoes and shallot on top.
- Next, lay balls of burrata on top of salad mixture. With a knife, gently make a cross cut on the top of the ball. Pull sides open and allow cream to spread out a little.
- Sprinkle pistachios across the top of the salad.
- Drizzle prepared dressing across the top of the salad.

I love burrata and this salad was amazing. Peaches are almost gone, so I’m glad I got to make this!
