Beef and Broccolini Stir Fry
Super simple and easy weeknight dinner. This Beef and Broccolini Stir Fry is coated with a flavorful sauce, loaded with nutrients, and only requires one pan to cook it all. Perfect for a weeknight dinner!
What I love about making a stir fry is that you can load up these dishes with a ton of veggies and no one seems to complain. I think it’s because you have this yummy sauce that just seems to nicely coat it all.
This Beef and Broccolini Stir Fry really does come together so easily. Once you have your veggies chopped and prepared it’s a recipe (once you make one or two times) that doesn’t take much thought. You can easily multitask the million other things that need to be tended to at that 5 o’clock hour.
To make this recipe you’ll need the following ingredients:

Ground beef: I chose to use ground beef in this recipe because I always have it on hand, and it’s quick to cook. I felt like it made it feel more of a reachable dish for us instead of using steak, but if you love steak go for it.
Butter: Salted or unsalted is fine. This will be used to cook and soften the onion. Can use olive oil if you need it to be dairy free.
Onion: Yellow or white.
Garlic
Broccolini: I love using broccolini for this recipe, though you can substitute broccoli if you prefer.
Yellow bell pepper
Red bell pepper
Coconut aminos: I love the flavor and extra nutrients that coconut aminos provide, but you can easily use soy sauce or tamari if you don’t have.
Honey: Adds a little sweet to the sauce. Can sub maple syrup if you need.
Ginger: Fresh ginger adds a great flavor in this sauce. You can use a small amount of ground if you don’t have it but I just don’t think it tastes the same. And, fresh ginger is loaded with nutrients as well.
Sesame oil: Great flavor for the sauce, if you don’t have try using olive oil instead.
Arrowroot starch: Acts as a thickening agent for the sauce, just a small amount will turn the liquids into a more saucy texture as it cooks. Can use cornstarch also.
Sesame seeds: For garnish (optional).
This recipe comes together in a few simple steps.
1. Chop your veggies according to the recipe.
2. Saute onion and garlic in the butter.
3. Add ground beef to the saucepan.
4. Once beef is half way cooked, add the bell peppers and broccolini to the pan.
5. Pour sauce over beef mixture and continue to cook until softened.




Beef and Broccolini Stir Fry

Ingredients
- 1 pound ground beef
- 1 tablespoon butter
- 1/2 cup onion ,diced
- 2 cloves garlic minced
- 1 red bell pepper , sliced
- 1 yellow bell pepper , sliced
- 1 bunch broccolini
- 1/2 cup coconut aminos , or soy sauce
- 1 tablespoon honey
- 1 inch ginger , minced
- 2 teaspoons sesame oil
- 2 teaspoons arrowroot starch
- sesame seeds , for garnish (optional)
Instructions
- Prepare all of the vegetables. Dice the onion, mince the garlic and ginger, slice the bell peppers into 1-2 inch slices, and trim the ends off the broccolini. Set aside.
- Melt the butter in the saucepan over medium heat.
- Once the butter is melted add the diced onion. Stir and cook for 2 minutes to soften.
- Add minced garlic to the onion. Stir and cook another minute.
- Add ground beef to the saucepan. Continue cooking over medium heat. Using a wooden spatula, break beef up into small pieces, allowing it to cook evenly. Stir beef mixture frequently as it cooks.
- As the beef cooks, make the sauce. Add the coconut aminos, honey, minced ginger, sesame oil and arrowroot starch. Using a fork, whisk mixture well until the starch is completely dissolved. Set aside.
- When the beef is almost cooked (half way through cooking, still slightly pink but slightly cooked) add the sliced bell peppers and broccolini. Stir mixture well and continue to cook.
- Once beef is no longer pink and vegetables are softened, pour sauce mixture into the saucepan. Stir sauce into beef and veggies to evenly coat. Continue cooking until the sauce slightly thickens.
- Remove from heat and serve over rice, cauliflower rice or noodles.
